The Rufete varietal is a very delicate grape with floral aromatics, and winemaker Ismael Gozolo treats the fruit very gently not only in the cellar, but continues to only press the fruit with hands and feet. The wine rests for nine months in used Burgundy barrels, retaining fresh fruit, pretty earth tones and high acidity.
