While Psi is unmistakably a Spanish wine, it's more Burgundy than Bordeaux, with more finesse than power. Herbal notes play off the dark red fruit beautiful, and elevated acidity makes it a joy to drink with just about any dish you could think of. Winemaker Peter Sisseck rocketed to cult status on the fame of Domino del Pingus, one of Spain's most sought-after and acclaimed wines. PSI is a project in the same region where Peter works with growers in an effort to resuscitate their vineyards through organic practices.
