Jose’s estate Couselo is located just north of Portugal in the O Rosal district of Rias Baixas. It’s a coastal wine, sourced from old Albarino vines that are precariously set in hillsides of sheer slate. Jose has never used chemicals in his vineyards and does everything by hand. This is electric, saline Albariño with a stony minerality that makes it both fantastic with anything from the sea but also just as good to start any meal as a mouth-watering apertif.
