Francisco Lavaque is from a family of winemakers in Salta in the far north of Argentina but Vallisto is his own project in the region's Cafayate Valley. His wonderfully fresh and structured Malbec, from a high-altitude single vineyard in Vina San Luis, is typical of Cafayate, with an abundance of ripe plum and black cherry fruit, along with notes of licorice, black olive, herbs, vanilla and spice, finishing with some silky tannin. A really impressive wine.
