Cava is Spain's answer to Champagne, made the same exact way, but with grapes native to Spain; some native solely to Catalonia, Xarael.lo being chief among them. This kosher version is crisp and dry, with medium bubbles and flavors of herbs, citrus, toast, and minerals.
