Champagne Ployez-Jacquemart "Liesse d'Harbonville" Brut 2000

Ployez-Jacquemart’s Tête de Cuvée. Primary fermentation takes place in 225L casks (2nd and 3rd year). 70% Chardonnay and 30% Pinot Noir and Pinot Meunier. No malolactic fermentation. Spends 6 months in the large casks, which imparts richness, structure and complexity, then spends 10 years in the cellar before being released.
