While Assyrtiko receives all of the attention on Santorini, the rare Aidani grape produces some of the most compelling whites found on the incredible island. The late Haridimos Hatzidakis produced this wine, which has blossomed into a cornucopia of citrus peel, hazelnuts and sea salt, with a rich and oily texture.
