Timo Mayer is a cult producer of Pinot Noir in Australia. His liberal use of whole-cluster fermentation makes for extremely light-colored wines with powerful aromatics of flowers, blood orange, and tart raspberries. Only a few hundred cases were produced of this beautiful Pinot.
