Derrumbes San Luis Potosi Salmiana Mezcal

Salmiana is a wild variety of Agave with a very distinct flavor profile, grown in the high altitude of the Central Mexican Plateau, in San Louis Potosi. This is a super-traditional mezcal that is anything but a smoke bomb. For those who like bright, funky spirits but can't quite take the taste of a tire fire, like some Mezcal tends to showcase, this is definitely the bottle for you. Made above-ground in a traditional hacienda, this bottling required almost 4 times the amount of agave normally used (when using the ever-present Blue Agave), which was then fermented with wild yeasts and distilled twice in copper pot stills and bottled unaged. An extraordinary expression of the terroir of the region, there is a potent minerality on the nose, peppery spice, cooked agave and a hint of smoke. The palate is soft and very gently sweet, with integrated notes of cooked fruit, spice and campfire smoke that provide for an overall smooth and sumptuous sipper. *Spirits available for in-store pickup & local delivery.
