This locally made spirit falls somewhere on the flavor profile between Joven Mezcal and Blanco Tequila. Made from whole Agave hearts and leaves purchased from Texas, Standard smokes their Agave with pineapple and pumpkin seeds before fermentation. As with all Standard Wormwood products, this spirit is in fact infused with Wormwood, which gives a unique bitterness not often seen in Agave spirits. Vegetal green notes are backed by freshly cracked black pepper on the nose, and a dry, light body sees a slightly smoky finish that is reminiscent of a young, Highlands Mezcal.
