The fermentation of this wine is done solely in the bottle, leading to a light-bodied wine that is just 11% ABV, with a small amount of gentle bubbles and a soft hint of lees. Very fresh and grassy, with aromas of green apples and cinnamon that lead to a zippy palate that is alive with vibrant acidity.
