Aphros "Phaunus" Palhete 2019

Aphros is one of the most forward-thinking producers in Portugal, and this natural wine is a throwback to the way wine was made centuries ago. Red and white grapes alike are combined in beeswax-lined clay Amphora and allowed to undergo Spontaneous fermentation on their skins. The wine is then aged on its lees for three months prior to bottling. In keeping with strict tradition and methods, no electricity was used to produce this wine, meaning everything was done by hand. The resulting wine is light in body (but by no means light in flavor), with a russet color, stinging acidity and wild, funky flavors. A "Natural Wine" lover's dream.
