Hillrock "Solera Aged" Bourbon

Hillrock Estate Distillery is located in the heart of the Hudson Valley, producing their remarkable spirits just a few hours outside of New York City on their lush property. In this series, Master Distiller Dave Pickerell has created the world's first Solera-aged Bourbon whiskey. The Solera process (most often used during Sherry production) is an intricate system of fractional blending, in which layers of stacked barrels each containing whiskies of different maturity levels are fed into another below it. No barrel is ever fully emptied, and every time any blended, aged whiskey is removed from the bottom-most layer for bottling, more is added to the top layer to keep the process ever-evolving, and the resultant age and complexity of the whiskey gradually broadening over time. Hillrock continues the development even further by finishing the Solera-extracted whiskey in 20 year-old Oloroso Sherry casks. What comes of this laborious and time-intensive production is a Bourbon of true depth and rich character. Caramel, dried fruit, vanilla bean and oak spice offer great power that is made elegant by delicate floral notes.
