The house of Dolin dates back to the early 1800s, and is the last independently owned company still producing Vermouth de Chambery. Vermouth, which derives its name for the German word for Wormwood (a classic ingredient), is a wine that has been aromatized and flavored with various botanicals. Dolin still uses real plants and the addition of real sugar, rather than artificial sweeteners and pre-prepared infusions, as many large-scale houses now use. What results here is a great French sweet vermouth which is a lighter, more herbaceous, and slightly more refined alternative to the ever-popular (and delicious) Carpano Antica or Martini Rosso. Striking first with dried herbs and spice, such as ginger and clove, it is balanced by red fruit and raisin, candied fruit and jam. Elegant and delicious to sip over ice with a twist of lemon, but a fantastic ingredient in any classic cocktail that calls for sweet vermouth.
