Barr Hill "Tom Cat" Barrel-Aged Gin

We’ve always thought that there was some seasonality to what we drink, but with the weather doing flip-flops these last couple of weeks it’s been a struggle to decide which bottle to choose. But fear not, because we’ve got the answer, and his name is Old Tom, Barr Hill Tom Cat Gin to be precise! Todd Hardie spent over four decades as a Beekeeper before deciding to incorporate his raw, organic Vermont honey into craft spirits. Caledonia Spirits has a commitment to making products that showcase their incredible reliance on, and relationship with, the land. These are truly agricultural products that use the highest quality, locally grown inputs. Barr Hill Gin is made only using two botanicals, finely sourced juniper & raw honey from their tended hives in Vermont and upstate New York. It's a subtly sweet gin (an Old Tom in its own right). Once distilled, Barr Hill's already magnificent Gin is aged for 3-4 months in new charred American oak barrels, and the results are simply amazing. The nose is a wonderful back and forth of invigorating floral juniper, which complements the fresh wood notes perfectly, and a cornucopia of notes from the fields of wildflowers these pollinators bring back to the hive. The texture is luscious at first but shifts gears on the mid-palate to show off flavors of clementines, banana, caramel, and oak, coming full circle to the extended piney, juniper finish. It's a truly unique, deeply enjoyable flavor with an enticing aroma that will delight any rum, whiskey, or bourbon drinker, but it’s a gin through and through. Perfect on its own over a large cube, or in the classic Martinez cocktail, it’s equally ideal for a Negroni/Boulevardier mashup or delicious in an Old Fashioned.
