The blend starts with the unfermented juice of Ugni Blanc, Colombard, and Montils then Eau-de-Vie de Cognac (meaning un-aged distillate) is added to bring the alcohol up to 17% and actually prevent fermentation. Aged for three years in used Cognac, which results in a complex bottle of goodness, full of spiciness and sweetness, while showing notes of apricot and dried fruits with a little kick at the finish. You can fo like the cognac makers or you could drink this chilled, or even on ice for more complexity.
