Marcel Couturier Pouilly-Loche 2019

Couturier works biodynamically with special attention paid to soil regeneration. Whole bunches are hand-picked and fermented slowly with wild yeast (yeast that exists ambiently in the cellar) and only the absolute minimum necessary sulfur is added at bottling. Most importantly, what this all amounts to in the glass, is a white wine that harmoniously marries bright torched pineapple notes with a zesty, lemon-peel-like acidity and just a touch of salty cream. Not only is this a great introduction to one of our favorite wine categories, but it's a bottle you could happily chug in a single sitting.
