A new producer on our radar, Mandeliere produced an excellent Chablis in the great 2020 vintage. 20% barrel fermentation adds the perfect amount of weight to this mineral, citrus-laden wine. Textbook Chablisienne acidity runs through the middle of this wine and would cut through any seafood you might want to serve it with.
